Gluten Free Pale Ale at Deschutes

In my previous post I promised to give you a description of the Gluten-free Ale once I could get my hands on it.  Well, I never got one.  What I could get was a description of an even newer gluten-free beer: the Gluten-free Pale Ale.

100% Gluten-Free Ale!  This beer is made with sorghum, brown rice, and carmelixed sugar syrup for a smooth gluten-free experience.  The juicy hop aromas come from Cascade, Centennial, Crystal and a touch of Citra.  Tell your friends!
IBU's: 49     Alcohol Content: 5.0%

I learned a few things from a helpful server that I hadn't realized before:

- The gluten-free beers are all brewed in the Bend facility.
- The gluten-free beers are all made in a dedicated gluten-free brew kettle and fermentation tank to avoid cross-contamination.
- The Gluten-Free Ale I had last week may have been one in a series of small experimental batches of gluten-free beer.
- Deschutes is trying to perfect various recipes in the hopes of hitting on one that's popular enough to bottle and sell!

In the spirit of the quest for the perfect gluten-free beer, please weigh in on which ones you've tried at Deschutes, and which were the best.  Here is my list, with my most favorite first:

I have also had a few of the gf beers from deschutes. Also, I attended a wedding where the bride was also a celiac, so a keg of one of the new ales was purchased (batch #27 or something I was told). It was a pleasant beer. Hoppy and none of the strong aftertaste that comes with some of their other gfbeers. I heard similar news, that they are trying several permutations currently to try to find a winner.

I hope they figure it out and then distribute to Georgia. I'm dying for a GOOD gluten-free beer out here!

Mild Country White Sourdough Bread

I gave up on producing a showy loaf a long time ago.  I always rolled my eyes a little when I saw photos online of perfect bloom or wide-open crumb.  "The mustard is going to just fall right through," I would think to my self disapprovingly, shaking my head a little. It turns out, I was just jealous. After a decade of gluten-free bread baking and recipe development, and through a collaboration with some other bakers, I've come up with a gf sourdough bread recipe that produces an open crumb, a large bloom, and sometimes, if I'm lucky, an ear.   The bread has a very mild, pleasant sourdough flavor and is very light in color. The crumb is very open but not too delicate.  It has a chewiness to the texture that I associate with a good sourdough bread.  The crust gets a nice browning and it toasts up nicely. Homemade Classic White Sandwich Bread

I've been baking since before I met my husband ten years ago.  He eats gluten but appreciates my baking efforts and gives me feedback on texture compared to gluten products, which he consumes regularly on his lunch break at work in the form of sandwiches.  I'm a photographer too but he graces the wall of his office with blown-up cell phone shots of half-eaten sandwiches and burritos from his favorite shops.  He likes my baked goods, sure, but who can blame him for going for gluten?
