I have made a bread that was 100% cassava flour and vegan. Increasing the cassava flour to cover the buckwheat would be my first try. However, it may need quite a bit more water or milk/milk substitute. I’ve had some success subbing flax seed for egg in this recipe. I have celiac but also have a slew of other...Hello! I have celiac but also have a slew of other food intolerances and sensitivities (possible MCAS). I can't do most grains, including buckwheat (I'm not sure of quinoa yet or Teff but the last time I tried Teff I was extremely sick). Can I sub almond flour, sunflower or pumpkin seed flours for the buckwheat? Thankfully I can do potato, I just might have to make my own and I can increase the cassava a bit. <br /><br />Second question, and this may be a stupid one but I'm new to baking with yeast - can I add more yeast and skip the egg? I can do egg baked in depending on my histamine load, but it's easier for me to just skip it as I'm anaphylactic to egg whites.
