Ener-G Wheat-free Pretzels


Have you tried these pretzels yet?  They are just like regular pretzels, but better.

I don't even like regular pretzels in all their salty blandness.  I never sought them out as a snack.  Ener-G Wheat-free Pretzels have more flavor than the regular kind, and the texture is just what you're looking for: crisp, dry, and fresh.

Plus, they are gluten-free as well.

We have eaten those for years and LOVE them. Even those of us who don't have to eat gluten-free, find them preferable to the wheat ones. Also yummy in gf chex-mix or dipped in chocolate.

I recently was given a bag of these, and liked them enough to buy more. They are tasty as is, and also agree with Rachel they would be good in a Chex mix.

I used these to make pretzel salad, you know, the one that has pretzel crust, then creamcheese filling then jello/strawberries on top, its so yummy and it turned out great, couldn't tell a difference. I blogged it. Nice summer dessert.

We have enjoyed these in the past - but recently came across the Glutino brand ones. In our house, they are MUCH preferred for flavor... and you can find them at Super Target for a fraction of the price!

Quick Yeasted Sourdough Sandwich Loaf Recipe

Readers have been asking if they can bake the Gluten-free Sourdough Discard Bread in a bread tin.  The answer seems to be yes, it usually works.  However, I've created this new recipe that is more of a sandwich style loaf.  This recipe is a single rise recipe, so it's quick and easy. Need to create a sourdough starter? Mild Country White Sourdough Bread

I gave up on producing a showy loaf a long time ago.  I always rolled my eyes a little when I saw photos online of perfect bloom or wide-open crumb.  "The mustard is going to just fall right through," I would think to my self disapprovingly, shaking my head a little. It turns out, I was just jealous. After a decade of gluten-free bread baking and recipe development, and through a collaboration with some other bakers, I've come up with a gf sourdough bread recipe that produces an open crumb, a large bloom, and sometimes, if I'm lucky, an ear.   The bread has a very mild, pleasant sourdough flavor and is very light in color. The crumb is very open but not too delicate.  It has a chewiness to the texture that I associate with a good sourdough bread.  The crust gets a nice browning and it toasts up nicely.
