Croissants, the Quick-er, Easy-er Way

Image
The Julia Childs croissant recipe takes 24 hours.  I don't want to brag here, but my new croissant recipe only takes six!  Croissants aren't easy, but I've taken the tricky bits out.  These crescent rolls are even better than if you took an extra18 hours to make them. The traditional method of making croissants calls for a laborious task called "laminating" that takes up lots of time and labor.  This recipe uses a technique typically seen in other types of pastries and biscuits - cutting in the butter.  This is much faster than laminating and doesn't take much in the way of technique.  So never fear, you do not need to get a degree from the Cordon Bleu to make these tasty pastries! Croissant Recipe, Quicker and Easier Mix time:10 minutes Chill time: 60 minutes Rolling/shaping time: 30 minutes Rise time: 3-4 hours Cook time: 20 minutes Yield: 8-12 croissants In a food processor, or in a medium mixing bowl, blend together: ...

Molten Mug Cakes in 30 Seconds

Image
Sometimes you just need a chocolate treat.  This recipe, adapted from a recipe on A Beach Cottage , was just what I was looking for: used ingredients I already had, was easy to whip up in one cup, and had single serving portions.  The molten center didn't hurt. To make it quick and easy, I have given the ingredients in volume measurements.  It mixes up really fast, then cooks even faster.  It's the perfect recipe for one or two people (full disclosure: I made one for my boyfriend, then ate both servings myself.  Then I made another one later that night.) Easy Pork Rib Roast Recipe

Image
Last week I scored some good-looking pork ribs on sale at my local market and I immediately considered making my Spanish-style BBQ Boneless Pork Ribs .  However, it ended up that I was too lazy to undertake that endeavor.  Instead I decided to come up with the easiest, most delicious method of cooking pork ribs ever conceived.  Although the bar was high, I achieved my goal in one attempt.  The idea is that simple.  Here is the recipe. Easy (Easiest) Pork Rib Roast Recipe Prep time: 10-15 min Cook time 20-30 min Put a cast-iron or other high-heat pan in the oven and set the temperature to 450 degrees.  While the oven is heating, rinse and pat dry: Boneless pork ribs or pork belly Sprinkle liberally with: cumin salt pepper In a medium bowl, toss together: Red potatoes, quartered salt pepper cumin olive oil When the oven comes up to temperature, place the seasoned pork and the potatoes on the hot cast-iron pan.  Roast for 20-...

Quick, Easy Gluten-free Naan Recipe

Image
I had never made naan before last week.  The only reason?  I had no idea how easy it is!  It's really one of the fastest breads you can make.  I can start making naan when my boyfriend calls in the take-out order and have it ready when he comes back with the food.  You don't really need to let it rise - the bread is leavened with baking soda as well as yeast.  The yeast adds flavor, the baking soda adds fluffiness.  The result is a very chewy, flexible flatbread.  Now you no longer have to be jealous if your boyfriend gets bread with his Indian food.  In fact, he'll probably want some of your naan hot off the grill. Gluten-free Naan Recipe makes 4 large naan In a large bowl, whisk together: 250g - about 1 Cup - warm kefir or yogurt 15g whole psyllium husk (or 10g ground psyllium husk) 2 tsp apple cider vinegar When the mixture has thickened, add to the bowl: 225 g  GF Bread Flour Blend 12 g sugar 1/2 tsp salt 1/2 tsp...

Quickest Stuffing Recipe!

Image
I've been there.  Pretty much every time I've cooked a turkey.  I go to dress the turkey and... oh, yeah.  You have to put the stuffing in hot!  Also, it takes an hour to make.  Well, not this stuffing!  You can have this ready in half the time.  Also, a little secret:  The turkey takes less time to cook and comes out even better if you don't stuff it! Another time saver!  If you use this recipe for stuffing the turkey, add in the chicken stock hot and omit the eggs. Check Back on my blog Friday to learn about my GIVEAWAY! If you need some bread recipes, I have made excellent, fluffy stuffing from these loaves: Teff Sandwich Bread Gluten-free Gourmand Sandwich Bread Quickest Stuffing Recipe In a large bowl, mix: 1 lb GF Bread cubes (cut them extra small if your bread is really dense) 1/2 stick minced celery (optional) 2 Tbsp minced shallot or onion 1 Tbsp dried sage 1 Tbsp dried thyme 1 tsp dried or fresh, chopped rosem...

Teriyaki Salmon Recipe

Image
This teriyaki salmon recipe is one of my "quick and easy" dishes.  In the time it takes you to steam some rice to go along with it, you will have your teriyaki sauce made and your salmon broiled. Teriyaki Salmon Recipe In a small bowl, whisk together: 1 Tbsp +1 tsp gluten-free tamari 1 tsp rice vinegar 2 tsp sugar 1 Tbsp kirin (rice wine) When the sugar is mostly dissolved, take a taste of the sauce.  It should taste balanced out between the salty, sweet, and sour.  It will sort of "sing" on your tongue.  If it seems out of balance, try adjusting with the ingredient that's lacking.  When you have the sauce how you want it, add any or all of these optional items: 1 tsp sesame oil 1 tsp hot chili oil 1/2 clove minced garlic 1/2 tsp minced ginger or ginger powder Put the on a broiler-safe dish: 1 pound salmon fillet, cut into single portions I use my cast-iron grill .  Baste the salmon with some of the teriyaki sauce an...
