GF 24-hour Sourdough Bread Recipe

This is a very traditional sourdough bread recipe, using artisan methods to create a nice, tangy, San Francisco-style sourdough bread.  If you like a really sour-but-smooth sourdough bread, this is the recipe for you. There are just a few differences between this recipe and a standard wheat-based recipe.  The most notable difference, of course, is the psyllium husk, which is a gluten substitute.  Read more about psyllium and other binders here .  Then of course there's the flour.  I use my own Bread Flour Blend for bread baking, but if you live outside the U.S. read my post  Make Your Own Gluten-free Bread Flour .  If you use your own flour blend, you may have to adjust the amount of water and psyllium you use. Gluten-free Restaurant List for Portland

I went to Australia earlier this year and did quite a bit of research before I left.  Local blogs in Melbourne and Sydney proved to be really helpful, along with dining sites that had gluten-free search options.  I thought I'd give back to the community by making a traveler's dining guide for Portland.  I'll only list the restaurants that I have personally eaten at and which have strong adherence to gluten-free safety.  There's a more comprehensive list over at Gluten-free Portland dot org. Easy Waffles: a Gluten-Free Dairy-Free Recipe

Waffles are easy.  Or, they can be.  My Gluten-free Corn Waffle Recipe and my Buckwheat Waffles Recipe take a little time and care.   That's why I decided to make a quick and easy basic waffle recipe that's not only gluten-free, but also dairy-free.  And of course it's delicious. For the liquid I used my favorite dairy substitute: coconut milk.  I wrote about the beauty of coconut cream in my last post and in my Gluten-free Vegan Scone Recipe . Easy Gluten-free Dairy-free Waffles Makes about 4 Belgian-style waffles. Mix in a medium bowl: 1 cup white rice flour 2 Tbsp sorghum flour 1 Tbsp tapioca flour 1 Tbsp potato flour 2 Tbsp sugar 1/4 tsp salt 2 tsp baking powder Heat your waffle iron. Recipe for Famous Gluten-free Scones

Among my friends, family, and co-workers I am famous for my scones. I get frequent requests for the recipe.   People are usually surprised to hear that it's wheat-free and gluten-free, it tastes so much like "regular."  Well here it is! The Best Gluten-free Scone Recipe Heat oven to 425 degrees. Mix together in a large bowl: 2 cups Gluten-free Pastry Flour 1/3 cup sugar 1 Tbsp baking powder (make sure it's GF) 1/4 tsp baking soda 1/2 tsp salt plus a pinch 1/4 tsp xanthan gum (if it's not included in your GF flour mix) Cut into pieces and drop in: 6 Tbsp cold unsalted butter Cut the butter in with a pastry blender or two knives, coating the pieces with flour as you go, until the largest pieces of butter are pea-sized. Keep this mixture cold, chilling it in the refrigerator if the butter starts to soften.
