Quickest Stuffing Recipe!

I've been there.  Pretty much every time I've cooked a turkey.  I go to dress the turkey and... oh, yeah.  You have to put the stuffing in hot!  Also, it takes an hour to make.  Well, not this stuffing!  You can have this ready in half the time.  Also, a little secret:  The turkey takes less time to cook and comes out even better if you don't stuff it! Traditional Bread Stuffing, Gluten-free

This holiday season you may find yourself craving a good old-fashioned stuffing with moist, fluffy bread cubes and lots of sage and thyme.  Well, you can have that.  Even if you're gluten-free. I had a few failures before I got the hang of making this recipe with gluten-free bread, so let me give you a few clues as to how this recipe is different than a regular one.  The first thing you should know is that the bread cubes may need to be cut smaller than with gluten-containing bread cubes, especially if the bread you are using is the very firm, heavy type of gluten-free bread.  That stuff can expand enormously, and  you end up with huge cubes once they absorb all the liquid, or dry hard-centered cubes if they don't absorb all the liquid.  Weigh the bread rather than trying to measure the cubes.  GF bread just doesn't have a consistent volume per variety so you can't measure by volume.  If your bread is very dry, you can skip the toasting. ...

Gluten-Free Gingerbread Cookie Recipe

Gluten-free Gingerbread Cookie Recipe These cookies are easy enough to work with that you can do gingerbread people, plain circles, or other shapes. In a medium bowl, mix together: 1.5 C  Deluxe Pastry Flour 1/2 cup teff flour 1 tsp baking powder 1/4 tsp baking soda 1/2 tsp xanthan gum (if your pastry mix doesn't already have it) 1/4 tsp salt 3 tsp ginger 1 3/4 tsp ground cinnamon 1/2 tsp ground cardamon 1/4 tsp ground cloves In a large bowl, beat for 3-3 minutes: 6 tsp softened butter 1/2 cup brown sugar 1 egg Add and beat for another minute or two: 1/3 cup molasses 1 tsp vanilla Stir in the dry ingredients a bit at a time until everything is thoroughly blended.  If the dough is very sticky, add a little more pastry flour one tablespoon at a time and beat or knead it in.  The dough should feel manageable at this point.  Divide it in half and wrap the two dough balls in wax paper.  Let them rest for 2-8 hours at room temperature, o...
