Sourdough Pizza Recipe with Sourdough and Yeast

Image
I have been trying various methods of doing a fully sourdough-leavened pizza for awhile, but the timing is tricky.  I've started to just do a "hybrid" sourdough recipe that also uses yeast, and it's been fantastic.  I get the texture and flavor of sourdough while also having the benefits of the rising power and easier time management of baker's yeast.  This recipe offers a few different variations that makes it easy to work for a vegan crust. Here are Amazon USA links to some of the equipment used: Perforated Pizza Pan I use the Pampered Chef Pizza Stone which is amazing But I've also used less expensive pizza stones like this one Actually the least expensive pizza stone I ever had I sourced at a local restaurant supply store. I haven't invested in a Pizza Peel yet but I like the looks of this wooden one .  I also like the looks of this metal pizza peel with detachable wooden handle. And of course I have had my eye on an OONI PIZZA OVEN for awhile.  Is t...

Gluten-free Pizza on the BBQ

Image
What is Pizza crust but a flat bread?  I have been experimenting with my bread recipes lately and decided to try cooking one on the grill.  To my delight, it worked wonderfully!  No, it doesn't fall through the grill or break apart.  In fact, as it cooks it firms up nicely and I was able to flip the crust with tongs.  The crust gets a nice char and the cheese adopts a wonderful smokey flavor.  Once I figured out this recipe, I was finally able to taste the delights of BBQ pizza! Recipe for BBQ Pizza Dough Prep time: 5 minutes Rest time: 20-30 minutes (fastest method)  Cook time: 5-10 minutes Makes two 10 to 12-inch pizzas Ingredients and other things you will need: 225g GF Bread Flour Blend 1 TBSP sugar 1/2 tsp salt 15g whole psyllium husk or 10g ground psyllium husk 225g Warm Water 2 tsp. Gluten-free Denver: Papou's Pizza and New Planet Beer

Image
I went to visit some family in Denver this weekend and was pleased to find many more gluten-free options than I had the last time I visited.  I even had a few surprises: some really good gluten-free pizza, and a gluten-free beer I'd never even heard of before!  Here I thought I was up on all the cutting-edge news for gluten-free beer, and I found a new one thanks to my mom's iPhone app, which led us to Papou's Pizza . From the outside, it just looks like a run-of-the-mill pizza joint in an average Denver strip mall.  However, Papou's serves some really good gluten-free pizza.  It's New England-style Pizza with a Greek influence - meaning lots of good roasted vegetable toppings.  I got the Mediterranean, which was roasted eggplant, fresh tomatoes, and feta.  The normal pizza crust looked good, too, and the place was a real crowd-pleaser.  We didn't all get gluten-free, but everyone from my 5-year-old niece to my grandmother liked the place, which is a...

A Gluten-free Weekend

Image
I had a good weekend. Saturday morning I went to the Portland Farmer's Market , where I scored some great lamb steaks from SuDan Farm , ate some habanero caramel chocolates from Alma Chocolate , and bought some vegetable starts for my garden. Then I went to the Gluten-free Food Fair, which I heard about through the Gluten-free Portland website. New Cascadia Traditional was there, as well as numerous other vendors. The highlight was sampling the gluten-free pizza from Mississippi Pizza Pub , which I hadn't tried before. The crust was really good, kind of like an herby foccacia bread, but not too thick. I'll have to go down there and do a full review of the place soon. I hear they also serve GF beer there. After the fair I went to Bob's Red Mill for the first time. They have a good selection of GF pastas and other products in the store. I bought some Ener-G White Rice Spaghetti that I'm excited to try, as well as some Tinkyada spinach spaghetti that look...
