Seven Virtues Serves GF Sandwiches

Walk to the corner of NE 60th and Glisan and you'll see something that catches your eye: a sign out front of Seven Virtues lets passers-by know that they now serve gluten-free sandwiches.  Upon further investigation, it turn out that they can serve their grilled sandwiches on New Cascadia Traditional flax bread.  I was pretty excited about this turn of events so I had to sample a sandwich right away.  I got the North Tabor which has turkey, pesto and cheese.

But first, I asked a few questions.  The man taking my order that day was one of the owners, and he was very helpful.  I asked if they grill the GF sandwiches on a dedicated grill, and he replied that they don't have demand or space for a dedicated grill right now, but they can give the grill a thorough cleaning before they make the gluten-free sandwiches.  They also use a separate cutting board and knife for prepping the GF stuff.  He told me that the sandwich would take a little longer than regular, because the GF bread takes longer to grill.

This ended up being true, but I was still very pleased with my sandwich once it arrived.  Another thing that pleased me is that Seven Virtues is also selling a wider selection of gluten-free pastries now, including several things from Petunia's Pies and Pastries, a new baking company which I previously reviewed here.  Almost all of the pastries that Petunia's makes are gluten-free and vegan.  Now my only complaint is that Seven Virtues now closes at five, which means I can't go there for a sandwich every day after work!

That's great that 7 Virtues is now serving sandwiches on gluten-free bread from New Cascadia. As for the dedicated grill, I wonder why they can't simply buy a panini grill to use for their GF sandwiches? It would cost them $50 or so and not take up too much space at all. Also, it would be easier for them because they wouldn't have to spend so much time cleaning. That's what I'd do!

Oh, it's great to find new places where they serve gluten free food. It's especially hard to find GF sandwiches and the understanding how important it is for us to separate GF food from the other food. Happy for you that you found this place:-)

Rebecca, I should have specified that they do all their sandwiches on a panini grill. They have two of them, but no room for more. I assume that they have enough demand for the regular kind during lunch hours that they can't dedicate one grill to be GF. Maybe someday!

L'actrice, it is exciting! I think that Seven Virtues has been serving some gluten-free pastries for a long time, so they have become aware of the issues surrounding GF food.

The GF bread they use at Seven Virtues comes from New Cascadia Traditional. They pick up different kinds of bread from there, but it's all vegan and most of it, if not all of it, is corn-free.

Quick Yeasted Sourdough Sandwich Loaf Recipe

Readers have been asking if they can bake the Gluten-free Sourdough Discard Bread in a bread tin.  The answer seems to be yes, it usually works.  However, I've created this new recipe that is more of a sandwich style loaf.  This recipe is a single rise recipe, so it's quick and easy. Need to create a sourdough starter? Mild Country White Sourdough Bread

I gave up on producing a showy loaf a long time ago.  I always rolled my eyes a little when I saw photos online of perfect bloom or wide-open crumb.  "The mustard is going to just fall right through," I would think to my self disapprovingly, shaking my head a little. It turns out, I was just jealous. After a decade of gluten-free bread baking and recipe development, and through a collaboration with some other bakers, I've come up with a gf sourdough bread recipe that produces an open crumb, a large bloom, and sometimes, if I'm lucky, an ear.   The bread has a very mild, pleasant sourdough flavor and is very light in color. The crumb is very open but not too delicate.  It has a chewiness to the texture that I associate with a good sourdough bread.  The crust gets a nice browning and it toasts up nicely.
