I Took a Little Hiatus

You may have wondered where the heck I've been for the last two months.  I certainly wasn't here, posting new recipes!  Well, after 20 years of soaking up the Portland winters in all their rainy, ice-storm glory, I finally decided to take a winter off.  It just so happened that my partner and I had breaks in our jobs at the right time, so we saved up and took off!  Here's some photos of our six weeks spent in the Yucatan Peninsula, Mexico.

Quick Yeasted Sourdough Sandwich Loaf Recipe

Readers have been asking if they can bake the Gluten-free Sourdough Discard Bread in a bread tin.  The answer seems to be yes, it usually works.  However, I've created this new recipe that is more of a sandwich style loaf.  This recipe is a single rise recipe, so it's quick and easy. Need to create a sourdough starter? This is the method I use most:  https://glutenfreegourmand.blogspot.com/2021/10/sourdough-starter-ready-to-use-in-3-7.html Why yeasted sourdough?  Sometimes it's tricky to get a great rise out of sourdough when you're first starting out.  Also, creating a new sourdough starter creates a bit of discard that can be used up in other recipes to improve the flavor and texture of the product. Coffee with Coconut Cream

I love cream.  However, I sometimes go through phases of lactose intolerance that prevent me from eating it.  This leads to an issue when I drink coffee: what do I add to it if not cream? I've tried all kinds of non-dairy creamers: almond milk, rice milk, soy milk.  I didn't like any of them.  If they didn't taste chemical they were just too... well, milky.  I started drinking my coffee black.  I'm doing the lactose-free thing right now, so I thought it was a perfect time to experiment with something new: coconut cream.  It's what I use for most of my other cream substitutes, so why not coffee creamer?  I use it in my gluten-free vegan scone recipe and it works beautifully.  It's the only thing I've found that has all the properties of cream that I like: the richness, the smoothness, the slight sweetness.
